Figgy Nibby Oatmeal Recipe


I love a warm breakfast in the winter. 

This morning it is particularly cold outside, a mere 20 degrees.   Way too cold if you ask me.

Here is the recipe for a super chunky oatmeal topped with nibs.  The taste of chocolate lingers after each bite and the unsweetened nibs are balanced by all of the sweet dried fruit. Try it on a cold morning at your home...

Figgy Nibby Oatmeal

Bring to a boil:
1 3/4 cups water
4 T brown sugar
3 chopped dried figs (make sure you remove the stems)
1/2 cup raisins
pinch of kosher salt

When boiling add:
1 cup old fashioned rolled oats

Boil for 4 minutes then add:
1 chopped apple (I used a Fuji apple, use your favorite)

Simmer for one more minute for crisp apple pieces.  If you like softer apple pieces simmer longer.

Spoon into bowls and top with nibs (I used Theo nibs this morning) and toasted pecans.
