What are the Brilliant Colors on those Chocolates?

I am holding a plate of chocolates (all made by Christopher Elbow) with brilliant colors and patterned exteriors.  The colors sure don't look like chocolate!  What are they made of?  Are they ok to eat?




I used to be afraid of eating those colors and designs until I learned that they are all made from colored cocoa butter.  Extra cocoa butter on a chocolate isn't a bad thing in my opinion.

Keep in mind that the chocolate on the inside could be dark, milk, or white.  It doesn't have to match the exterior.

Go ahead - eat those gorgeous works of art!
