Serious Chocolate Contest Entry Today
That statement rings true when I think about the last two weeks preparing for this contest. I've learned so much about the differences between natural and dutched cocoa as well as pairing other ingredients with cocoa.
Before it started I thought that I knew how to make a great brownie, now I know how to make many great brownies, as well as how to make one that has the flavor and texture of chalk, and a little about the science behind a brownie.
